Prune Snow Recipe
Ingredients
| 1 3/4 c. cooked prunes, unsweetened | ||
| 2 tablesp. lemon juice | ||
| Cinnamon | 1/8 Teaspoon | |
| Egg whites | 2 | |
| 3 tablesp. granulated sugar | ||
| Custard Sauce | ||
Directions
Remove the pits from the cooked prunes and press the fruit through a food mill or a sieve—there should be about 1 1/2 c of pulp.
Add the lemon juice and cinnamon.
Beat the egg whites until quite stiff, then add the sugar gradually, while continuing to beat until stiff.
Fold into the prunes.
Serve with-chilled Custard Sauce, made by using the 2 leftover egg yolks in making twice Custard Sauce III.
