Prune Refrigerator Cookies Recipe
Ingredients
| 1 cup soft butter or margarine | ||
| Firmly packed light brown sugar | 1 Cup (16 tbs) | |
| Granulated Sugar | 1/2 Cup (16 tbs) | |
| Eggs | 2 Small | |
| Vinegar | 1 Tablespoon | |
| Vanilla extract | 1 Teaspoon | |
| 1 cup chopped cooked pitted prunes | ||
| All purpose flour | 4 Cup (16 tbs) | |
| 1 teaspoon each of baking soda and salt | ||
| Nuts | 1 Cup (16 tbs), chopped | |
Directions
Cream butter and sugars.
Add eggs, one at a time, and beat until light.
Add vinegar, vanilla, prunes, and sifted dry ingredients; mix well and add nuts.
Shape into 3 rolls about 2 inches in diameter.
Wrap in wax paper and chill overnight.
Cut into 1/8 inch slices and arrange on ungreased cookie sheets.
Bake in preheated hot oven (400°F.) for about 12 minutes.
