Ingredients
2/3 cup cut-up prunes or apricots (cooked, drained, pitted)
2 egg whites
1/4 cup sugar
1/8 tsp. salt
2 tsp. lemon juice
2 tbsp. pecans, chopped
Directions
Beat fruit, egg whites, sugar, and salt at high speed on mixer until stiff peaks form, 4 to 5 min.
Fold in lemon juice and pecans.
For Baked Whip: Pour into 1-qt. baking dish; set in pan of hot water (1" deep) and bake in 350° (mod.) oven 30 to 35 min., or until puffed and a thin top coating has formed.
For Quick Whip: Spoon mixture directly into dessert dishes; chill.
