Prune Nut Bread Recipe

Ingredients
1 & 1/2 cups (10 ounces) soft pitted prunes
3/4 cup boiling water
3/4 cup whole wheat flour
1 cup unbleached white flour
1/2 cup brown sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 egg
2 tablespoons vegetable oil
2 tablespoons undiluted evaporated milk
1/2 cup to 1 cup chopped walnuts, pecans, or other nuts
Directions
1. Preheat the oven to 350 degrees.
2. Snip the prunes in small pieces with a scissors. Cover with boiling water and set aside.
3. Mix together the whole wheat flour, white flour, brown sugar, baking soda, salt, and cinnamon.
4. Beat the egg with the oil and milk and add to the dry ingredients with the nuts and prunes (do not drain). Mix well and turn into a greased 8- by 4- by 2-inch loaf pan lined with wax paper.
5. Bake for 45 minutes, or until a toothpick inserted in the center comes out clean. Turn out of pan, peel off paper, and cool on a wire rack.
