Prune Bars Recipe

Ingredients
1/4 cup margarine
1 cup all-purpose flour
1/2 tsp ground cinnamon
2 T granulated fructose
2 tsp granulated sugar replacement
1/2 cup orange juice
1 egg
1/2 tsp baking powder
1/4 tsp baking soda
1/2 cup snipped dried pitted prunes
Directions
Beat margarine with an electric mixer on High for 30 seconds.
Add 1/2 c. (125 mL) of the flour, cinnamon, fructose, sugar replacement, 1/4 c. (60 mL) of the orange juice, egg, baking powder, and baking soda; then continue beating for 1 minute more, or until thoroughly blended.
Beat in remaining 1/2 cup (125 mL) of flour and remaining orange juice.
Stir in snipped prunes.
Spread cookie batter into the bottom of a 7 x 11 in. (17 x 27 cm) ungreased baking pan.
Bake at 350°F (175°C) for 25 minutes, or until toothpick inserted in middle comes out clean.
Cool on rack.
