Prune Applesauce Loaf Recipe

Ingredients
1 cup all-purpose flour
1 cup rye or whole-wheat flour
1 teaspoon each baking powder and baking soda
1/2 teaspoon each ground cinnamon and nutmeg
1/2 teaspoon salt
1/3 cup chopped walnuts or pecans
1/3 cup chopped prunes or currants
1 1/4 cups unsweetened applesauce
2/3 cup light brown sugar
3 egg whites
3 tablespoons canola, vegetable, or olive oil
Directions
1 Preheat the oven to 325° F.
Lightly grease a 9"x5"x 3" loaf pan and cut a piece of wax paper to fit the bottom.
In a large bowl, stir together the all-purpose flour, rye flour, baking powder, baking soda, cinnamon, nutmeg, salt, walnuts, and prunes.
2 In a medium-size bowl, stir together the applesauce, sugar, egg whites, and oil until blended.
Add the applesauce mixture to the dry ingredients and stir until just combined.
3 Spoon into the prepared pan.
Bake for 60 to 65 minutes or until a toothpick inserted in the center comes out clean.
Let the loaf cool in the pan for 5 minutes, then turn it out onto a rack to cool.
