Prune And Spice Quick Bread Recipe
Prune and spice quick bread is a mixed flour bread. Fruited with fresh, pitted prunes, the prune and spice quick bread is moistened with milk. Spiced with cinnamon and nutmeg, this fruity bread is oven baked for a lovely and flavorful bread.
Ingredients
Nonstick cooking spray
1 cup sifted all purpose flour
1/2 cup unsifted whole wheat flour
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1 large egg
1/2 cup sugar
1 cup buttermilk or sour milk
1 tablespoon corn oil
1/2 cup chopped pitted prunes
Directions
Preheat the oven to 375°F.
Lightly coat a 9 1/4"x 5 1/4"x 2 3/4" loaf pan with the cooking spray and set aside.
In a large bowl, combine the all purpose flour, whole wheat flour, baking soda, cinnamon, nutmeg, and salt; set aside.
In a small bowl, combine the egg and sugar and beat well with a fork.
Stir in the buttermilk and corn oil.
Add to the flour mixture and stir just until the dry ingredients are moistened.
Mix in the prunes.
Spoon the batter into the loaf pan and bake for 40 minutes or until a toothpick inserted in the center of the loaf comes out clean.
Cool the loaf in the pan on a wire rack for 5 minutes, turn out onto the rack, and let cool completely, right side up, before slicing.
