Provencal Seafood Soup Recipe

My family of seafood lovers fell head over heels in love with this Provenqal Seafood Soup. What I would say is that you need not necessarily be a seafood lover to like this Provenqal Seafood Soup.Worth your time!

Ingredients

 
4 tbs (60 ml) Mediterranean Oil
 
4 cloves garlic, minced
 
6 ripe medium tomatoes or 28-oz can (840 g) diced tomatoes
 
Pinch of salt
 
1 tbs (15 ml) Organic White Wine Vinegar plus
 
1 cup (240 ml) water or 1 cup (240 ml) dry white wine
 
1 cup (240 ml) chicken broth or water
 
2 lbs (910 g) assorted fresh firm- fleshed fish and shellfish, cut into large spoon-size pieces
 
8 tbs (120 ml) chopped Italian parsley
 
6 tbs (90 ml) chopped fresh basil fresh ground pepper, to taste

Directions

Heat oil in a large casserole over medium-low heat.
For 1 minute, saute garlic, tomatoes and a pinch of salt.
Add wine vinegar and simmer for 2 minutes.
Add broth and return to a simmer.
Add the seafood.
Gently turn fish until just cooked through, no more than 5 minutes.
Gently stir in herbs.
