Directions

Preheat oven to 350°.
In mixing bowl stir the soy flour, nonfat dry milk powder, baking powder, and salt together thoroughly.
Stir in the chopped dates and chopped walnuts.
Combine the beaten eggs, grated orange peel, orange juice, honey, and cooking oil.
Stir the egg mixture into the dry ingredients just till moistened.
Fill greased muffin cups 1/2 full.
Bake at 350° till done, about 30 minutes.
Makes 12 muffins.
