Prosciutto Stuffed With Red Chard Recipe
Ingredients
| 1 bunch red Swiss chard, tough stems removed, washed and dried | ||
| Light olive oil | 2 Tablespoon | |
| Garlic | 2 Clove (5gm), finely chopped | |
| Salt | 1/2 Teaspoon | |
| Red wine vinegar | 1 Tablespoon | |
| Extra virgin olive oil | 2 Tablespoon | |
| 16 very thin slices prosciutto (1/3 to 1/2 pound) | ||
Directions
GETTING READY
1) Lay chard leaves in a flat surface and slice lengthwise into thin ribbons.
2) Chop roughly again crosswise.
MAKING
3) In a large saute pan warm olive oil over medium heat.
4) Put greens, garlic and salt and fry for 7 to 1 0 minutes.
5) Pour vinegar and take off from heat.
6) Pour extra virgin olive oil and keep aside to cool.
7) Place a tablespoonful of warm filling on each piece of prosciutto and roll up.
8) Cut rolls in half.
9) Place rolls in aluminum foil and put in portable container
10) Pack in a picnic basket.
