Prosciutto and Mozzarella Parcels Recipe
Ingredients
| A little hot chilli sauce | ||
| 6 prosciutto slices, such as Parma ham | ||
| 200 g/7oz mozzarella cheese, cut into | ||

| 6 sheets of filo pastry, each measuring 45 x 28cm/18 x 11in, thawed if frozen | ||
| 50 g/2 oz/1/4 cup butter, melted | ||
Directions
1. Preheat the oven to 200°C/400°F/ Gas 6. Sprinkle a little of the hot chilli sauce over each slice of prosciutto. Place a slice of mozzarella in the centre of each piece of prosciutto, then fold the ends of the ham around the cheese to meet neatly in the middle.
2. Brush a sheet of filo pastry with a little melted butter. Fold in half lengthways and brush the top with butter. Wrap a ham and mozzarella parcel in the pastry to make a package, tucking the edges in neatly as you go. Place on a baking sheet, seam side down, and brush with a little more butter. Repeat with the remaining ham and cheese parcels and pastry sheets.
3. Bake the filo parcels for 15 minutes, or until the pastry is crisp and evenly golden. Serve all together or arrange on individual plates, with a frisee salad, if you wish. Serve immediately.
