Prize Winning Pumpkin Pie Recipe

Ingredients
Filling:
2 eggs 2
1-1/2 cups cooked pumpkin 375 mL
1-1/4 cups light cream 300 mL
1 cup packed brown sugar 250 mL
1 tsp cinnamon 5 mL
1/2 tsp ginger 2 mL
1/2 tsp salt 2 mL
Directions
On lightly floured surface, roll out pastry and fit into 9-inch (23 cm) pie plate; trim and flute edge.
Filling: In large bowl, beat eggs lightly; blend in pumpkin, cream, sugar, cinnamon, ginger and salt.
Pour into pie shell.
Bake in 425°F (220°C) oven for 15 minutes; reduce heat to 350°F (180°C) and bake for about 35 minutes longer or until tip of pointed knife inserted in center comes out clean.
Let cool on rack.
