Ingredients

 2 lbs. smoked black cod
 Cold water
 Milk1/2 Cup (16 tbs)
 Lemon Butter Sauce, below

Directions

Put cod into a skillet or saucepan.
Cover fish with cold water.
Cover skillet.
Bring water to simmering over low heat and simmer 1 minute.
Drain.
Repeat process once or twice depending on saltiness of fish.
Simmer in last water until fish is cooked.
Allow about 10 minutes cooking time per inch thickness of fish.
Put cooked cod into a greased baking dish and pour milk over cod.
Bake at 350°F 10 minutes, or until milk is hot.
