Pack Lawry's salt into fat on top and meat on sides.
Cover completely with lots of Lawry's salt.
Season with salt and pepper.
In shallow pan place sliced onions.
Lay roast on top.
Do not put water in pan while cooking.
Place in 400° preheated oven, uncovered, for 20-30 minutes.
This sears the outside.
Reduce heat to 325°, and bake 15 minutes per pound.
This will give you a rare or medium rare roast.
Do not overcook.
When desired doneness is reached, remove roast from oven and let stand on platter.
To prepare gravy, put pan over medium heat and deglaze with water.
Simmer a few minutes and serve.
Leave onions in gravy as they add to the flavor.
