Primavera Pasta Salad Recipe

Ingredients

 
1 1/2 tbs (25 ml) olive oil
 
1 1/2 tbs (25 ml) butter or margarine
 
1 1/2 cups (355 ml) broccoli florets
 
2 cloves garlic, minced
 
2 medium tomatoes, seeded and diced
 
3/4 cup (180 ml) julienned zucchini
 
1/2 cup (120 ml) julienned carrot
 
1/4 cup (60 ml) honey
 
1/4 cup (60 ml) lemon juice
 
1 1/2 tsp (8 ml) grated lemon peel
 
3/4 tsp (4 ml) dried basil, crushed
 
3/4 tsp (4 ml) dried oregano, crushed salt, to taste pepper, to taste
 
6 oz (180 g) linguine or fettuccine noodles, cooked
 
Parmesan cheese, grated

Directions

Heat oil and butter in large skillet over medium-high heat; add broccoli and garlic and stir-fry 2 minutes.
Reduce heat to low and add tomatoes, zucchini, carrot, honey, lemon juice, lemon peel and seasonings.
Simmer about 4 minutes or until vegetables are tender, stirring gently.
Toss with noodles; cool.
Sprinkle with Parmesan cheese.
