Pretty Party Puffs Recipe
Ingredients
| Whole wheat pastry flour | 3/4 Cup (16 tbs) | |
| Unbleached white flour - 3/4 cup | ||
| Water | 1 1/4 Cup (16 tbs) | |
| Butter | 1/4 Cup (16 tbs) | |
| Eggs | 4 Small, slightly beaten | |
| Cornstarch | 3 Tablespoon (Sunshine Filling - 2 cups , divided :) | |
| Squeezed orange juice | 2 Cup (16 tbs), divided (Sunshine Filling - 2 cups , divided :) | |
| Honey | 2 Tablespoon (Sunshine Filling - 2 cups , divided :) | |
| Lemon extract | 1/2 Teaspoon (Sunshine Filling - 2 cups , divided :) | |
Directions
GETTING READY
1) Preheat the oven to 400°F
MAKING
2) In a medium bowl, sift the whole wheat pastry flour and unbleached white flour together.
3) In a medium saucepan, add water and butter and bring to a rolling boil.
4) Lower the heat and stir in flour and beat with a wooden spoon until the mixture leaves sides of the pan.
5) Remove from heat and keep aside until the mixture is slightly cool.
6) Gradually beat in the eggs until smooth and thoroughly blended.
7) On an ungreased baking sheet, drop slightly mounded teaspoonfuls of the batter.
8) Bake on the middle shelf of oven for about 20 minutes, or until lightly browned.
9) Pierce sides of each puff with a sharp knife and transfer the puffs on wire racks to cool.
10) Split each cooled puff crosswise with a sharp knife and remove any soft or uncooked dough.
FINALIZING
12) Sunshine Filling : In an airtight jar, shake the cornstarch and 1/2 cup orange juice together.
13) In a medium saucepan, combine 1 1/2 cup orange juice, honey, and cornstarch mixture together.
14) Bring to a boil over a medium heat, then stir constantly and cook until thickened.
15) Stir in the lemon extract and allow to cool.
16) Spoon 2 teaspoons of filling on each puff and replace tops.
SERVING
17) Pile the Pretty Party Puffs in a pyramid on a large plate and serve.
