Ingredients
| 1 flank steak (about 2 pounds) | ||
| Boiling water | 6 Cup (16 tbs) | |
| Salt | 2 Teaspoon | |
| Cider vinegar | 1/4 Cup (16 tbs) | |
| Peppercorns | 1/2 Teaspoon | |
| Bay leaf | 1 Small | |
| White horseradish | ||
Directions
Place flank steak in a kettle with boiling water.
Add remaining ingredients except horseradish.
Simmer over low heat for 3 hours, or until meat is very tender.
Drain and reserve liquid.
Grind beef very fine and pack into a loaf pan (9x5x3 inches).
Strain reserved liquid.
Simmer, uncovered, until liquid is reduced to 1 cup.
Pour over meat.
Cover with wax paper.
Press with a heavy weight.
Chill overnight.
Turn out and slice thin.
Serve with prepared white horseradish.
