Preserved Lemons Recipe
Ingredients
| Lemons | 6 | |
| Salt | 1⁄4 Cup (4 tbs) | |
| Cloves | 2 | |
| Cinnamon stick | 1 Inch | |
| Black peppercorns | 1⁄4 Teaspoon | |
| Coriander seeds | 1 Teaspoon |
Directions
Cut lemons into four, leaving the bottom intact.
Fill with salt and close again.
Arrange them in jar, putting salt and spices in between lemons, push them down to press the juice, if the juice is not enough to cover the fruits, add more lemon juice.
Leave the jar in a warm place in the kitchen, shake every day to melt the salt, for about a month.
Wash with cold water and use according your recipe.
It keeps well more than six months.
