Preserved Orange Slices Recipe
Ingredients
| 6 large thin skinned oranges | ||
| Water | ||
| Sugar | 2 Cup (16 tbs) | |
| Lemon juice | 1/3 Cup (16 tbs) | |
| Cognac | 1/4 Cup (16 tbs) | |
Directions
1. Wash the oranges and cut into one-half-inch slices. Cover with boiling water and cook until tender, or about one hour. Drain, discarding the water.
2. Boil together the sugar and two cups water five minutes, stirring until the sugar is dissolved. Add the lemon juice and orange slices and simmer until the orange rind is tender and translucent, or about one hour. Add water as necessary.
3. Place the orange slices in hot sterile jars. Cover with the boiling syrup, add the cognac and seal.
