Ingredients
1/2 to 1 pound prawns
2 teaspoons almond oil or vegetable oil
4 green onions, thinly sliced on diagonal
1 red pepper, sliced into thin strips
4 to 6 leaves bok choy, thinly sliced
1 to 2 ounces pickled ginger in vinegar
1 to 2 teaspoons shoyu to taste
1/4 cup whole almonds, toasted
Directions
Rinse prawns briefly, drain.
In a heavy frying pan or wok, heat oil over medium high heat.
When hot, add prawns and cook, stirring for 2 minutes.
Add vegetables; stir, cover, and cook for 2 to 3 minutes.
Stir in ginger with vinegar and shoyu; simmer for 2 more minutes until very hot.
Add almonds and toss.
