Ingredients
| 1 package medium blue com tortillas | ||
| 8 cooked prawns | ||
| 10 tomatillos, husked, well rinsed, and quartered | ||
| Chili | 3 , seeded, thinly sliced | |
| 6 olives, pitted and sliced | ||
| Olive oil | 1 Teaspoon | |
| 2 to 3 tablespoons green salsa to taste | ||
| 1/4 cup sour cream or yogurt | ||
Directions
Loosely wrap in foil as many tortillas as you think you can eat, keep in warm oven.
Rinse prawns briefly, drain.
In a heavy frying pan, heat oil over medium high heat.
Add tomatillos, chiles, and olives.
Stir in 2 to 3 tablespoons water; reduce heat and simmer, partially covered, until vegetables are soft, about 10 minutes.
Add salsa and prawns; heat through.
To serve, spoon a large prawn, some sauce, and a dollop of sour cream into a warm tortilla, roll up and eat.
