Prawns With Peas Recipe

Ingredients
1 slice fresh ginger
1 clove garlic
2 tablespoons peanut oil
4 oz. shelled cooked prawns
1/4 pint (U.S. 2/3 cup) chicken stock
Pinch each salt, sugar and Ve-Tsin
1 teaspoon soy sauce
5-6 oz. cooked peas
1 level teaspoon cornflour
1 dessertspoon water
Directions
Crush the fresh ginger and crush the clove of garlic.
Place the peanut oil in a large frying-pan.
Before it becomes really hot, add the crushed ginger and crushed garlic.
Cook until the garlic takes on a pale gold tone then remove it together with the ginger.
Add the cooked prawns, cook for 1/2 minute then add the chicken stock, the salt, sugar, Ve-Tsin, soy sauce and, finally, the peas and the cornflour blended with the water.
Cook for 1 1/2 minutes.
Place the peanut oil in a large frying-pan.
