Prawns With Long Life Noodles Recipe

Ingredients

 
4 Pacific prawns
 
Pinch each salt, sugar and Ve-Tsin
 
1 1/2 teaspoons cornflour water
 
4 inside leaves of cos lettuce
 
2 oz. parboiled long life' noodles
 
2 tablespoons peanut oil
 
1 clove garlic
 
1 slice fresh ginger
 
1/4 pint (U.S. 5/8 cup) chicken stock
 
1/2 teaspoon soy sauce

Directions

Shell and trim the prawns.
After removing the black intestinal lines, cut the prawns diagonally into pieces 3/4 inch long.
Sprinkle them with the seasonings, 1/2 teaspoon cornflour and 1 teaspoon water and work well into the prawns; leave while proceeding with the rest of the dish.
Cut the lettuce into thin strips, pour boiling water over them, leave for 5 minutes and then drain.
Boil the noodles for 4-5 minutes and drain them.
Put the oil in a frying-pan.
Add the crushed ginger and garlic and heat.
When the garlic becomes a golden colour discard it and the ginger.
Fry the prawn pieces for 3 minutes, tossing and moving them about.
Add the noodles and move them about for 1 minute, then add the stock.
Cook together for 4 minutes.
Add the lettuce and soy sauce and boil up.
Lastly, add 1 teaspoon cornflour, blended with 1 dessertspoon water, and cook all for 1 1/2 minutes.
