Prawns With Fragrant Tea Recipe
Ingredients

| 1 egg white, lightly beaten | ||
| Cornstarch | 2 Teaspoon | |
| 2 teaspoons Shao Hsing wine or dry sherry | ||
| Salt | 1/4 Teaspoon | |
| Pepper white | 1 Pinch | |
| Raw shrimp | 3/4 pound, deveined | |
| Chicken broth | 1/4 Cup (16 tbs) | |
| 1 tablespoon Shao Hsing wine or dry sherry | ||
| 1 1/2 teaspoons quality ground Chinese oolong tea | ||
| Sugar | 1/4 Teaspoon | |
| Pepper white | 1 Pinch | |
| Mint leaves for garnish | ||
Directions
Preparation Combine marinade ingredients in a bowl.
Add shrimp and stir to coat.
Set aside for 30 minutes.
Cooking Place steaming rack in a wok.
Pour water to just below level of rack and bring to a boil.
Place shrimp in a heatproof dish and set dish on rack.
Cover and steam for 7 minutes or until shrimp feel firm and turn pink.
While shrimp are steaming, combine broth, wine, tea, sugar, and pepper in a small saucepan and bring to a boil; reduce heat and keep warm.
