Prawns With Fragrant Tea Recipe


Main Ingredient


 Egg white1 , lightly beaten
 Cornstarch2 Teaspoon
 Wine/Dry sherry2 Teaspoon (Shao Hsing)
 Salt1⁄4 Teaspoon
 Medium raw shrimp3⁄4 Pound, peeled (leaving tail intact) and deveined
 Chicken broth1⁄4 Cup (4 tbs)
 Shao hsing wine/Dry sherry1 Tablespoon
 Ground chinese oolong tea1 1⁄2 Teaspoon (Quality)
 Sugar1⁄4 Teaspoon
 White pepper1 Pinch
 Mint leaves1 Tablespoon (Garnish)


Preparation Combine marinade ingredients in a bowl.
Add shrimp and stir to coat.
Set aside for 30 minutes.
Cooking Place steaming rack in a wok.
Pour water to just below level of rack and bring to a boil.
Place shrimp in a heatproof dish and set dish on rack.
Cover and steam for 7 minutes or until shrimp feel firm and turn pink.
While shrimp are steaming, combine broth, wine, tea, sugar, and pepper in a small saucepan and bring to a boil; reduce heat and keep warm.
