Prawns Italian Recipe

Ingredients

 
1 medium onion, peeled and chopped finely
 
1 tablespoonful sunflower oil or similar
 
2 cloves garlic, peeled
 
2 oz (50g) mushrooms, sliced
 
1/2 medium green pepper, de-seeded and sliced thinly
 
4 medium tomatoes, peeled and chopped
 
3 teaspoonsful wheat-free soya sauce
 
1/2 lb (1/4 kilo) peeled prawns
 
Sea salt and freshly ground black pepper
 
2 tablespoonsful finely chopped fresh parsley

Directions

Fry the onion in the oil.
Crush in the garlic, using a garlic press.
Add the mushrooms, green pepper and tomatoes.
Bring to the boil and simmer gently for 5 minutes.
Add the soya sauce and prawns.
Heat through gently and simmer for another 5 minutes.
Season to taste.
