Ingredients

 Oil2 Tablespoon
 675 g/1 1/2 lbs peeled prawns
 2.5 cm/1-inch piece fresh root ginger, peeled and finely chopped
 Garlic2 Clove (5gm), peeled, finely chopped
 Onions spring3 , chopped
 1 leek, white part only, cut into strips
 120 g/4 oz peas, shelled
 175 g/6 oz bean sprouts
 Dark soy sauce2 Tablespoon
 Sugar1 Teaspoon
 Salt1 Pinch

Directions

1. Heat the oil in a wok and stir-fry the prawns for 2-3 minutes. Set the prawns aside.
2. Reheat the oil and add the ginger and garlic. Stir quickly, then add the onions, leek and peas. Stir-fry for 2-3 minutes.
3. Add the bean sprouts and prawns to the cooked vegetables. Stir in the soy sauce, sugar and salt, and cook for 2 minutes Serve immediately.
