Prawn Curry Recipe
Prawn Curry is a yummy shrimp preparation that will definitely be a winner at the next party you host. I served the Prawn Curry last week for my nieces birthday party and it was an instant success! Don’t miss this one!
Ingredients
500g shelled and deveined green prawns
Juice of 1 lime or 1/2 lemon
1/4 teaspoon saffron threads, soaked in 1 tablespoon hot water
5 garlic cloves, crushed
3 curry leaves or 1 small bay leaf
2 teaspoons gra ted fresh ginger
2 cloves
1 teaspoon cinnamon
1/2 teaspoon fenugreek
1/2 teaspoon crushed cardamom seed
1/4 teaspoon cayenne (or to taste)
2 tablespoons peanut or coconut oil
2 large tomatoes, peeled, seeded and chopped
1 cup coconut milk

Directions
Mix prawns with lime or lemon juice, saffron and water and toss well. Add garlic, curry leaves, ginger and spices. Mix and stand, covered, at room temperature for 1 hour. Heat oil in a frying pan, add prawn mixture and saute briskly for 2 minutes or until prawns turn pink. Lift prawns out with a slotted spoon and set them aside. Add tomato to the pan and fry gently for 3 minutes, then add coconut milk and cook until the mixture thickens a little. Add salt to taste. Return prawns to pan and heat through. Serve at once. Serves2-3 with rice.
