Prawn Shrimp Puffs Recipe
Ingredients
| 1/2 lb. cooked shelled prawns | ||
| Onion | 1 , chopped | |
| 2 oz. ghee or butter | ||
| Ground coriander | 1 Teaspoon | |
| Turmeric | 1 Teaspoon | |
| Ground cumin | 1/2 Teaspoon | |
| Cold water | 3 Tablespoon | |
| 3 tablespoons boiling water salt | ||
| 12 oz. packet frozen puff pastry beaten egg or milk to glaze | ||
Directions
Clean the prawns, then mince (grind) them into a paste.
Fry the onion in the ghee or butter until brown.
Mix the coriander, turmeric and cumin with the cold water to form a paste, then add the same quantity of boiling water.
Stir the mixture into the onion and cook, stirring, for 3 minutes.
Then add the prawn paste and salt and cook gently for 5 minutes.
Leave the mixture to cool.
Roll out the pastry very thinly and cut it into 3 inch squares.
Fill the centre of each generously with the prawn mixture.
Damp the pastry edges and fold each square corner to corner, to make triangles, sealing well.
Brush with beaten egg or milk and place on a baking sheet.
Bake in a moderately hot oven, 400°F, Gas Mark 6 for about 25 minutes, until the puffs are golden brown.
