Ingredients

 Onion1 Large
 Butter1 Ounce
 White wine1 Tablespoon
 Salt and black pepper, pinch curry powder
 Prawns8 Ounce
 8 medium vol-au-vent cases (or 4 large cases)

Directions

MAKING
1) Using a knife, peel and finely chop the onion. Then, slice the mushrooms.
2) Heat a saucepan, melt butter and sauté onion till it is soft.
3) Put in the mushrooms, turn up the heat and quickly sauté the mushrooms until soft.
4) Pour in the wine and brandy, stir over high heat till most of the liquid has dried up.
5) Put in the cream, let it come to a boil and simmer until it is thick.
6) Put in the prawns and stir for a few minutes.
7) In a hot oven, heat vol-au-vent cases for a few minutes.
8) Remove and fill with the prawn mixture.

SERVING
9) Serve hot!
