Directions

Mix sugars, buttermilk, baking soda and salt in a heavy, deep pan, and stir over low heat until sugar is dissolved.
Boil over moderate heat until thermometer registers 240° F. or until mixture forms soft balls in cold water.
Remove from heat, and stir in nuts, butter or margarine and vanilla; beat until mixture is thick and slightly sugary.
Set saucepan over low heat or hot water to prevent mixture from hardening any further, and drop tablespoonfuls onto waxed paper on cookie sheet.
Make each patty about 2 1/2 inches across.
Cover with waxed paper, and chill before using.If pralines are to be used for gifts, wrap each separately in cellophane, or set in fluted paper cups.
Makes about 1 1/2 pounds.
