Ingredients

 
1 turkey carcass, or 2 chicken, duck or geese carcasses, plus any leftover scraps and giblets
 
2 onions, unpeeled and quartered
 
2 carrots, chopped
 
2 leeks, chopped (white and some green)
 
2 turnips, chopped
 
1 garlic clove
 
6 sprigs parsley
 
1 sprig thyme
 
1 bay leaf
 
6 black peppercorns, lightly crushed
 
1/2 tablespoon salt
 
1/2 teaspoon each poultry seasoning and ground turmeric
 
3 quarts water

Directions

Put all ingredients in soup kettle, cover, bring slowly to rapid boil and skim off any surface scum.
Lower heat, cover and simmer 2 hours.
Strain, jar, cool, cover and refrigerate.
