Poor Man's Pudding - Pouding Chomeur Recipe Video

Pouding Chomeur, or "poor man's pudding" was invented at the beginning of the Great Depression in Quebec, Canada. It's a very simple dessert to prepare, using some simple ingredients that are readily available pretty much anywhere. Though the recipe is very easy to do, the results will amaze you. I'm telling you, if there's a dessert you have to try this weekend it's this one!

Things You Will Need

1. 8-inch baking dish

Directions

GETTING READY
1. Grease an 8-inch baking dish and set aside.
2. Preheat the oven to 350 F.

MAKING
2. In a large mixing bowl, combine flour, sugar, baking powder and nutmeg well.
3. Into the bowl of dry ingredients add the wet ingredients such as milk and melted unsalted butter. Add a teaspoon of lemon zest and mix until combined.
4. Also add 1/2 a cup of raisins and mix by the gently folding the batter in using a spatula.
5. Take a pre-greased baking dish and spread the batter on the bottom of it.
6.Take a bowl to prepare the maple sauce and whisk together water, melted butter, maple syrup and corn starch. Whisk well to combine.
7. Pour the liquid mixture over the batter and pop it into the preheated oven for about 45 minutes or until golden brown.

SERVING
8. Serve with some of the maple sauce poured over the top and a scoop of vanilla ice cream.

NOTE
As the cake bakes it floats to the top leaving the sweet maple sauce underneath.

As soon as I saw Poor Man's Pudding... I knew exactly what it was... my mother-in-law made it regular...and always in a 9 x 13 pan....If you don't have maple syrup handy the recipe I have calls for brown sugar and water... Which is really a poor man's pudding
