Directions

Wash the potatoes and pat dry with paper towel.
Do not peel.
With a knife cut a few incisions in each potato.
Brush with corn oil and bake at 400 degrees for about one hour.
Cut a one-inch opening in the top of each potato and carefully scoop out the insides, leaving the skin intact.
Reserve the pulp.
Heat the butter in a heavy skillet and saute the onions until soft.
Add the potato pulp, blending well.
Add the cream, salt and pepper, mixing well.
Add the cheese and mix again.
Spoon the mixture into the potato shells.
Sprinkle with paprika.
Place the shells on a baking sheet.
Return the potatoes to the oven and bake 375 degrees about eighteen to twenty minutes.
Serve hot.
