Potatoes With Shallot-Garlic-Onion Relish Recipe

Ingredients
8-oz pkg (240 g) Pearl Onions, Red, White or Gold, peeled or 1 cup (240 ml) chopped brown onions
6 Shallots, peeled and thinly sliced
1 clove FElephant Garlic, peeled and finely minced
1 cup (240 ml) beef or chicken broth
2 tbs (30 ml) chopped fresh parsley
1/4 tsp (1 ml) pepper
1 1/2 lbs (683 g) FYellow Finnish, Yukon Gold, Purple or New Baby Potatoes, sliced 1/4-inch thick
Directions
If using pearl onions, halve peeled onions.
Place in a medium saucepan with shallots, garlic and broth.
Bring to a boil; reduce heat to simmer.
Cover and braise 5 minutes, or until vegetables are very tender.
Uncover and simmer 5-10 minutes more, or until nearly all liquid has disappeared.
Stir in parsley and pepper; set aside.
Cook potatoes in boiling water to cover for 10-15 minutes.
Drain well.
Place in a medium saucepan with shallots, garlic and broth.
Bring to a boil; reduce heat to simmer.
