Ingredients
1 lb (450 g) potatoes, peeled, cut into chunks
1/3 cup (80 ml) butter
1/2 lb (225 g) onions, finely sliced
1 egg, beaten
Salt and pepper
Pinch of nutmeg
3 tbsp (45 ml) grated Gruyere or Parmesan cheese
Directions
– Preheat oven to 400 °F (205 °C).
– In a saucepan filled with lightly salted boiling water, cook potatoes, then drain, puree in the food processor and set aside.
– In a skillet, melt 4 tbsp (60 ml) butter and saute onions and add onion mixture to puree. Add egg, season with salt, pepper, and nutmeg and stir mixture.
– Butter a baking dish, then spread puree evenly. Sprinkle with cheese and dot with butter. Bake for 20 minutes or until golden crust forms.
