Directions

Melt the butter in a bowl in the microwave oven for 1 minute on HIGH.
Season generously with salt and pepper.
Sprinkle salt and pepper in the base of a round dish 9 inches (22 cm) in diameter.
Add the potatoes and pour the white wine over.
Cover and microwave on HIGH for 14 minutes.
Dice the sweet pimento very finely.
Mix the Cheddar cheese with the diced pimento.
Sprinkle on top of the potatoes and pour the melted butter over.
