Potatoes O Brien Recipe
Ingredients
| 4 medium-size potatoes, pared and cubed | ||
| 1 small onion, chopped coarsely | ||
| Pepper red | 1/4 Cup (16 tbs), diced | |
| Green pepper | 1/4 Cup (16 tbs), diced | |
| Butter/Margarine | 1/4 Cup (16 tbs) | |
| Salt | 1/2 Teaspoon | |
| Pepper | 1 Dash | |
Directions
1. Cook the potatoes, covered, in boiling salted water in a medium-size saucepan 15 minutes, or until tender; drain.
2. Saute onion and red and green peppers in the butter or margarine until soft in a medium-size skillet. Stir in potatoes; sprinkle with salt and pepper.
3. Cook, stirring carefully several times, 5 minutes, or until the potatoes are lightly browned.
