 Olive oil3 Tablespoon
 1/2 cup each of finely chopped onion and parsley
 Garlic1 Clove (5gm), mashed
 4 medium-large boiling potatoes, peeled and cut into 1/4-inch slices
 1 1/2 cups chicken or beef bouillon
 Salt To Taste
 Pepper To Taste

Directions

In olive oil in a large kettle slowly saute onion, parsley, and garlic until soft, about 15 minutes.
Add potatoes and cook, gently stirring, for a few minutes.
Add bouillon and salt and pepper.
Bring to a boil; reduce heat, cover, and simmer until potatoes are tender.
Taste and correct seasoning.
Makes 4 to 6 servings.
