Potatoes In Chilli Vinegar Recipe
Ingredients
| 2 kg/4 lb baby new potatoes, halved | ||
| CHILLI VINEGAR DRESSING | ||
| Red onions | 2 , sliced | |
| 3 jalapefio peppers, chopped | ||
| Red chillies | 3 , seeded and chopped | |
| Garlic | 2 Clove (5gm), minced | |
| Sugar | 3 Tablespoon | |
| Capers | 2 Tablespoon, drained | |
| Thyme leaves | 2 Tablespoon | |
| Oregano leaves | 1 Tablespoon | |
| 4 fresh or dried bay leaves | ||
| 1 cup/250 ml/8 fl oz apple cider vinegar | ||
| 1/2 cup/125 ml/4 fl oz water | ||
Directions
1. Place potatoes in a saucepan of boiling water and cook until tender. Drain and place in a serving bowl.
2. To make dressing, place onions, jalapefio and red chillies, garlic, sugar, capers, thyme, oregano, bay leaves, vinegar and water in a bowl and mix to combine. Pour dressing over warm potatoes, toss to combine and stand at room temperature for 2 hours before serving.
