Potatoes Duchesse Recipe

This potato duchesse recipe is a oven baked potato recipe. Spiced with nutmeg and cooked with eggs, these mashed potatoes are seasoned to taste and make a great accompaniment for most homely meals.

Ingredients

 
2 cups hot mashed potatoes
 
1/2 teaspoon salt
 
1/2 teaspoon nutmeg
 
2 eggs, beaten
 
1 teaspoon baking powder
 
Beaten egg or melted butter

Directions

Combine potatoes, eggs, baking powder, salt, and nutmeg, beating hard.
Form into cakes or shape with a pastry tube and place on a buttered baking sheet.
Brush with slightly beaten egg or melted butter.
Brown under broiler flame or bake in a preheated 400° oven until golden.
The potato mixture may also be dropped by spoonfuls into deep fat preheated to 385° to 395° on deep fat thermometer or until a 1 inch cube of bread browns in 60 seconds.
When well browned, drain on paper towels.
May be prepared ahead and reheated in a preheated 425° oven for 8 to 10 minutes.
