1/2 lb (225 g) potatoes, unpeeled
 
1/3 cup (80 ml) skim milk
 
Salt
 
1 tbsp (15ml)oil
 
1 onion, chopped
 
1/4 cup (60 ml) mushrooms
 
1/4 1b (115 g) lean ground beef
 
1/4 cup (60 ml) tomatoes, ground

Directions

–  Preheat oven to 250 °F (120 °C).
–  In a saucepan filled with lightly salted boiling water, cook potatoes. Mash. Add milk and salt. Spread mixture evenly in a ring mold and keep warm.
–  In a skillet, heat oil and saute onion, mushrooms, and ground beef. Add tomatoes and simmer for 20 minutes.
–  Unmold potato crown onto a warm serving dish, and put the meat and vegetable mixture in the center.
