Directions
Boil potatoes in their skins until just tender. Drain and cool. Peel potatoes, if desired, and slice into 1/4-inch rounds. Layer slices in a greased au gratin dish or 8-inch square baking pan.
Melt the butter or margarine in a medium-sized saucepan over low heat. Remove from heat. Sprinkle flour in, stirring until butter or margarine is absorbed. Gradually add milk, stirring until smooth. Return to stove and cook over medium-low heat, stirring constantly, until thickened.
Add cheese, salt and cayenne pepper. Continue cooking and stirring over low heat until cheese melts.
Pour cheese sauce over potatoes.
Bake uncovered at 350° F. for 20 to 30 minutes.
