Potato Salad With Parsley Dressing Recipe
Ingredients
3 cups cooked potatoes, peeled and sliced
2 hard-boiled egg whites
1/2 cup chopped scallions
2 tablespoons pickle relish
1/2 tablespoon Dijon mustard
1 tablespoon nonfat mayonnaise
1/2 teaspoon white wine vinegar
1 tablespoon nonfat buttermilk or skim milk
1/4 cup fresh chopped parsley
Pinch of cayenne pepper
1/4 teaspoon black pepper
Directions
1. Combine potatoes, egg whites, scallions, and pickle relish.
