Boil 1 lb.
of potatoes, peel them, and dice them coarsely whilst still hot.
Make a small bowlful of mayonnaise And add to it 1 tablespoonful of French mustard mixed with 1 tablespoon-fill of vinegar, a pinch of pepper, and chopped mixed herbs.
Stir the potatoes quickly into this sauce.
Leave to get cold.
The potatoes will have almost entirely absorbed the sauce by then, so add 1 tablespoonful of hot stock and 1 tablespoonfiil of white wine.
Serve cold.
