Ingredients

 1 potato (about 3 ounces), boiled or baked
 Mayonnaise1 Tablespoon
 Vinegar1 Tablespoon
 1 teaspoon dehydrated onion flakes, reconstituted in 1 tablespoon water
 1 teaspoon dehydrated pepper flakes, reconstituted in 1 tablespoon water
 Prepared mustard1/2 Teaspoon
 Chopped pimento and chives for garnish
 Salt and cayenne pepper
 Salt and cayenne pepper

Directions

Boil or bake the potato with its skin on, and peel while it's warm.
Dice evenly.
Combine remaining ingredients (except pimento and chives) and stir gently into diced potatoes.
Garnish.
Let stand in refrigerator half an hour or more.
