Potato Pudding Muffins Recipe

potato pudding muffins are savory and delicious muffins made with potaoes and onions. This recipe can be prepared with either bacon fat or butter. Versatile and filling, this muffin can be served after a meal or as a snack.

Ingredients

 
12 medium potatoes 12
 
2 grated medium onions 2
 
4 eggs, well-beaten 4
 
1 cup all-purpose flour 250 mL
 
1 tbsp salt 15 mL
 
1/2 tsp pepper 2mL
 
1/2 tsp savory 2mL
 
1 tsp baking powder 5mL
 
8 tbsp bacon fat or butter, melted 125 mL

Directions

Peel potatoes and grate over a bowl of cold water.
Drain, pressing out as much water as possible.
In a large bowl, combine grated pota: toes, onions and eggs.
In another bowl, combine flour, salt, pepper, savory and baking powder.
Add to potato mixture and mix well.
Stir in melted fat.
Spoon batter into prepared muffin tin, filling cups to the top.
Bake in preheated oven for 1 hour or until brown and crusty.
Let stand for 30 minutes on a cake rack, then run a knife around edges and remove from pan.
