Potato Onion Tomato Curry Recipe
Potato cooked with tomatoes and onions in an authentic Bengali style. Easy to prepare and tastes very good.

Ingredients
| Potato | 4 , cut into cubes | |
| Onion | 2 , cut into cubes | |
| Bay leaf | 1 | |
| Finely chopped ginger | 1 Inch | |
| Green chili | 4 , sliced lengthwise | |
| Panch phoron | 1⁄2 Teaspoon | |
| Red chili powder | 1⁄2 Teaspoon | |
| Chopped tomato | 2 | |
| Turmeric powder | 1⁄2 Teaspoon | |
| Red chili | 2 | |
| Salt | To Taste | |
| Sugar | 1⁄2 Teaspoon | |
| Chopped cilantro | 2 Bunch (200 gm) | |
| Water | 2 Cup (32 tbs) |
Directions
1. For seasoning: Heat oil. Add panch phoron, bay leaf and whole red chili. Fry for 30 seconds.
2. Add potato, ginger and onion. Fry for a few minutes.
3. Add salt, turmeric powder & red chili powder. Fry for a few minutes.
4. Add chopped tomatoes, green chili, salt and sugar. Fry for few minutes.
5. Add water and cook till potatoes are cooked properly and gravy just thickens.
6. Remove from heat. Garnish with chopped cilantro leaves and serve with roti, puri or paratha.
