Directions

Heat 3 tablespoons of oil in a frying pan and cook the potatoes for 2 minutes on each side; it will be necessary to cook these in two or three batches. Heat the remaining tablespoon of oil in another frying pan or a saucepan and fry the onion very slowly for about 5 minutes. Add the meat, Worcestershire sauce, tomato paste, garlic, oregano, salt and pepper to the onion and cook these gently together for 15 minutes, stirring from time to time. Line a 2-litre (8-cup) casserole with the potato slices. Put half the meat mixture in the casserole, and cover this with a layer of potatoes; add the rest of the meat and sprinkle over the cheese. Put the casserole on one side and make white sauce. Pour the sauce over the contents of the casserole, cover with a lid, and cook in a moderate oven 180C (350F) for 45 minutes. A popular variation of Greek moussaka. Good eaten hot or cold.
