 1 pound potatoes, cooked and thinly sliced
 Onion1 , sliced
 1 cup cooked peas
 1 Spanish sausage, cooked and chopped
 Cooked ham1/4 pound, chopped
 Salt1 1/2 Teaspoon
 1 pimiento, cut in thin strips
 Eggs6

Directions

Place half of potatoes in greased 1 1/2 -quart casserole.
Add half of sausage, ham, onion, and peas.
Sprinkle with half of salt.
Repeat process with remaining potatoes, sausage, ham, onion, peas, and salt.
Arrange pimiento on top in radiating pattern; break eggs between pimiento strips.
Cover; bake at 375° for 25 minutes
