Potato Ham Omelette Recipe
Ingredients
| 1 pound potatoes, cooked and thinly sliced | ||
| Onion | 1 , sliced | |
| 1 cup cooked peas | ||
| 1 Spanish sausage, cooked and chopped | ||
| Cooked ham | 1/4 pound, chopped | |
| Salt | 1 1/2 Teaspoon | |
| 1 pimiento, cut in thin strips | ||
| Eggs | 6 | |
Directions
Place half of potatoes in greased 1 1/2 -quart casserole.
Add half of sausage, ham, onion, and peas.
Sprinkle with half of salt.
Repeat process with remaining potatoes, sausage, ham, onion, peas, and salt.
Arrange pimiento on top in radiating pattern; break eggs between pimiento strips.
Cover; bake at 375° for 25 minutes
