Directions

Prepare 1/2 cup lightly packed riced or sieved potato from instant mashed potatoes according to package directions, using only the water (omit milk, butter, and seasonings).
Blend potato with the 1/4 cup milk; set aside.
Heat butter in a saucepan over low heat until lightly browned.
Add chocolate and stir just until melted; remove from heat.
Add potatoes, salt, and extract and beat until well blended.
Alternately add confectioners' sugar and 1/4 cup milk, beating well after each addition.
